Ingredients

  • ¾ cup (170 grams) whole milk, 110 degrees F
  • 2¼ teaspoons instant yeast
  • 3 eggs, at room temperature
  • 4¼ (510 grams) cups all-purpose flour
  • ½ cup (57 grams) cornstarch
  • ½ cup (99 grams) granulated sugar
  • 1½ teaspoons salt
  • ¾ cup (170 grams) unsalted butter, cut into 12 pieces and softened
  • For the Filling:
  • 1½ cups (319 grams) light brown sugar
  • 4½ teaspoons ground cinnamon
  • ¼ teaspoon salt
  • 4 tablespoons (57 grams) unsalted butter, softened
  • 1 apple, peeled, cored and chopped
  • ¼ cup salted caramel sauce
  • For the Salted Caramel Icing:
  • ½ cup (57 grams) powdered sugar
  • 2 tablespoons heavy cream
  • 1 tablespoon salted caramel sauce
