Ingredients
- 1 quart rhubarb, minced
- 1 c. sugar
- 1/4 c. water
- 1/2 c. sugar
- 2 Tbsp. butter
- 1/4 c. lowfat milk
- 1 x egg, beaten
- 1 c. flour
- 1 Tbsp. baking pwdr
Directions
- Mix first 3 ingredients and let stand while mixing remainder of ingredients. Pour rhubarb mix into baking pan. Spread cake batter over the top. Bake at 375 degrees for 30 to 40 min or possibly till cake tests done when touched lightly. Serve with sweet cream or possibly lowfat milk.
