  1. Cream Large eggs, sugar, oil and vinegar. Sift cake flour and soda together. Add in flour while beating. Add in lowfat milk slowly. While still beating, add in vanilla and food coloring. Bake in 3 layers at 350 degrees for 25 min. Press lightly to check if layers are spongy and done.
  2. FROSTING: 1 lb powdered sugar 8 ounce cream cheese 4 ounce butter 1 tsp vanilla 1 c. minced pecans Heat cream cheese and butter on very low heat. Add in sugar, pecans and vanilla. Mix well and spread over cooled layers, top and sides. If mix becomes too thick, add in a little lowfat milk.
  3. Makes: 1 3-layer cake
