Red Pepper, Feta And Garlic Hummos Recipe

Ingredients

  • 1 can Chickpeas, liquid removed and rinsed 1 (19-ounce/540 mL)
  • 2 x Sweet red peppers, roasted, peeled, seeded, and diced 2
  • 2 x Cloves garlic, chopped, or possibly 1 head roasted garlic 2
  • 2 ounce Feta cheese, crumbled 60 g
  • 1/4 tsp Warm red pepper sauce 1 mL
  • 1/2 tsp Pepper 2 mL
  •     Salt to taste

Directions

  1. Place chickpeas in food processor and chop finely (till almost mashed).
  2. Add in red peppers and garlic. Process on/off till combined but not completely pureed.
  3. Add in feta cheese, warm pepper sauce and pepper and process on/off till proportionately distributed. Taste and season with salt.
  4. NOTES : There are many variations of Hummos. This delicious version makes about 2 c.. For other versions, or possibly for instructions on roasting red peppers and garlic, refer to More HeartSmart Cooking with Bonnie Stern.
