Ingredients

Directions

  1. In a food processor, finely chop the red peppers and jalapenos with a little of the vinegar.
  2. Place in a non-reactive pan and add in the rest of the vinegar and salt. Bring to a boil, then simmer over medium heat for about 5 min.
  3. Remove from the heat and measure out 3 c.; add in fresh lime juice if low in the mix to make up the 3 c..
  4. Place back in the pan and stir in the sugar and powdered pectin. Stir to mix well and bring to a rolling boil. Cook for about 5 min.
  5. Remove from heat and allow to cold a bit and taste for chile heat. Add in Tabasco if you like.
  6. Pour into sterilized warm jars and seal. Cold, label and store in the pantry.
  7. Tastes great on bagels with cream cheese.
