,%20why%20don't%20you%20join%20along%20in%20this%20fun%20challenge%20called%20The%2012%20Weeks%20of%20Christmas?%3C/p%3E%3Cp%3EHiya!%3C/p%3E%3Cp%3EI%20had%20a%20post%20all%20set%20up%20for%20the%20first%20week%20of%20The%2012%20Weeks%20of%20Christmas%20(hosted%20by%20the%20lovely%20Brenda)%20last%20week,%20but%20fell%20ill%20and%20was%20too%20sick%20to%20link%20up%20all%20weekend%20or%20publish%20the%20post!%20Boo%20to%20that.%20Now%20here%20I%20am%20pushing%20my%20week%201%20post%20back%20to%20week%202.%20I%20hate%20that%20I%20won't%20have%2012%20official%20weeks%20of%20treats,%20but%20that's%20ok.%20We%20all%20will%20survive.%3C/p%3E%3Cp%3EThe%20question%20is,%20how%20have%20you%20been%20surviving%20without%20this?%3C/p%3E%3Cp%3EPumpkin%20Spice%20Fudge.%3C/p%3E%3Cp%3ENot%20the%20prettiest%20fudge%20I've%20ever%20made.%20But%20very%20tasty.%20It%20was%20very%20rich%20and%20sweet%20and%20I%20loved%20the%20pumpkin%20flavor.%3C/p%3E%3Cp%3EPumpkin%20Spice%20Fudge%3C/p%3E%3Cp%3Eever-so-slightly%20adapted%20from%20Aunt%20Peg's%20Recipe%20Box%3C/p%3E%3Cp%3Econtinue%20cooking%20until%20the%20mixture%20begins%20to%20boil,%20stirring%20constantly.%3C/p%3E%3Cp%3EBoil%20until%20a%20candy%20thermometer%20reaches%20the%20the%20soft-ball%20stage%20(234%20~%3C/p%3E%3Cp%3E243%20degrees).%20This%20may%20take%20about%2030%20minutes.%20Remove%20from%20heat,%20stir%20in%20the%20white%20chips%20until%20they%20are%3C/p%3E%3Cp%3Eall%20melted%20and%20mixture%20is%20smooth.%20Add%20the%20remaining%20ingredients%20and%20mix%3C/p%3E%3Cp%3Ewell.%20Pour%20into%20the%20prepared%20pan,%20and%20cool%20to%20room%20temperature.%20Cut%20into%3C/p%3E%3Cp%3Esquares.%20Store%20refrigerated%20in%20an%20air%20tight%20container.%3C/p%3E%3Cp%3EI%20wonder%20if%20I%20could%20cut%20back%20on%20some%20of%20the%20sugar.%20I%20couldn't%20eat%20too%20much%20at%20once%20because%20it%20was%20so%20sweet!%20A%20little%20goes%20a%20long%20way.%3C/p%3E%3Cp%3ENote,%20I%20also%20used%20a%209x9%20inch%20loaf%20pan%20instead%20of%20a%209x%2013%20inch%20dish.%20I%20don't%20think%20I%20would%20have%20had%20enough%20mixture%20to%20fill%20the%20dish%20or%20I%20would%20have%20really%20flat%20fudge!%3C/p%3E%3Cp%3EI%20can't%20wait%20til%20Christmas.%20Wait,%20yes%20I%20can.%20But%20this%20fudge%20can't!%20So%20make%20it%20now!%20And%20join%20in%20The%2012%20Weeks%20of%20Christmas%20Treats%20fun.%3C/p%3E%3Cp%3EPeace,%20and%20bacon%20grease!%3C/p%3E){kind=link}
