- 3 large eggs
- 1 c. sugar
- 2/3 c. pumpkin
- 1 teaspoon salt
- 1 teaspoon baking soda
- 1/2 teaspoon cinnamon
- 3/4 c. flour
- 1/4 c. nuts, pecans
- 8 ounce cream cheese
- 1 teaspoon vanilla
- 2 teaspoon butter
- 1 c. powdered sugar
Directions
- Beat large eggs and gradually add in sugar and blend in remaining ingredients.Spread onto a greased wax papered 11x17-inch jelly roll pan and sprinkle w/a 1/4 c. nuts. Bake for 15 min at 350 degrees.
- Prepare while baking. A towel covered with powdered sugar. Turn cake out onto sugared towel and roll into a roll. Let cool thoroughly.
- Unroll log and spread with filling. Reroll, refrigerate and enjoy.Sprinkle with powdered sugar before serving.
