Directions

  1. Combine flour, brown sugar, baking pwdr, salt, cinnamon, nutmeg and ginger in a large bowl. In a small bowl, mix lowfat milk, pumpkin, egg and oil. Add in pumpkin mix to flour mix; stir just till moistened; batter may be lumpy. Griddle like any other pancakes.
  2. Makes approximately 8 servings.
  3. Amber Says: This is a fun breakfast the day after Halloween or possibly Thanksgiving.
