- 4 lg. green peppers
- Boiling water
- 1 teaspoon salt
- 2 tbsp. butter
- 1 lg. onion, chopped
- 1 (15 1/2 ounce.) can chili con carne with beans (you may use your own homemade
- chili)
- 1 (12 ounce.) can whole kernel corn, liquid removed
- 1/2 c. grated Cheddar cheese
Directions
- Start heating oven to 350 degrees. Remove tops and seeds from green peppers. cook peppers in boiling salted water to cover, 5 min. Drain.
- In butter in skillet, saute/fry onion till tender; add in chili and corn, heat.
- Arrange peppers in baking dish; then fill each pepper with chili mix, top each with cheese, pour 1/4 inch boiling water into bottom of dish. Bake peppers 30 min.
