Ingredients
- 2 Tbsp. Walnut oil
- 1/2 c. Toasted walnuts
- 1/2 lb Green beans,, blanched
- Â Â Salt and pepper
- 2 x Yukon gold potatoes,, peeled and parboiled
- 1 lb Penne or possibly fusilli,, cooked
- Â Â Parmesan cheese,, grated
- 3/4 c. Pesto
Directions
- In large pot gently heat oil. Quickly saute/fry green beans. Add in potatoes, pasta and pesto. Cook till hot. Stir in walnuts. Season with salt and pepper. Serve topped with grated cheese.
