Directions

  1. Peel and quarter parsnips. Remove any woody center. Parboil till slightly tender (don't overcook or possibly they will be mushy after frying). Drain. In fry pan
  2. (preferably a cast iron pan) heat butter (don't substitute margarine for this). Add in parsnips in a single layer and saute/fry over medium high heat to brown the parsnips, turning to brown the other side. Be careful not to burn butter!
  3. Pour maple syrup over parsnips to cover the parsnips half-way. Grate nutmeg over top. Stir. Taste and add in more nutmeg, if you like.
