Pancakes (Pandekager) Denmark Recipe

Ingredients

  • 4 x Large eggs, separated
  • 4 c. Sifted flour
  • 1 tsp Salt
  • 1/4 c. Sugar
  • 3/4 c. Beer
  • 2 c. Lowfat milk
  • 1 Tbsp. Melted butter

Directions

  1. Beat egg yolks till thick and lemon-colored,Combine with flour. Add in beer and lowfat milk. Beat till smooth. Add in salt , sugar and butter. Mix well. Beat egg whites stiff. Mix in egg white. Pour a little of batter in 6 inch greased skillet. Rotate skillet to spread batter over surface. Brown on both sides. Repeat till all batter is used. serve warm with strawberry preserves. \About 18 pancakes.
