Ingredients
- 2 sirloin steaks (10 ounce each)
- 3/4 c. veal stock
- 3/4 c. burgundy wine
- 1 shallot, minced
- 2 green onions, minced
- 1 1/2 T butter
- Salt and pepper to taste
Directions
- Season the steak. Heat the butter in a large frying pan over high heat. Sear the steaks 2 min on each side. Transfer the steak to a platter. Add in the shallots and deglaze with the wine. Reduce till almost 3 tbsp and add in the veal stock. Reduce again to almost 1/2 cup. Add in the minced scallions and adjust seasoning. Pour over the steak and serve immediately.
