- 1-1/4 cups shortbread cookies crumbs (about 15 cookies)
- 2 Tbsp. unsalted butter, melted
- For the filling:
- 2 pounds good-quality whole milk ricotta cheese, at room temperature
- 3/4 cup granulated sugar
- 1/4 cup orange marmalade (plus 1/2 cup for glaze)
- 1/3 cup all-purpose flour
- 3 large eggs, at room temperature
- 2 large egg yolks, at room temperature
- 2 tsp. vanilla extract
- 1/2 tsp. salt
