  • 1 quart. lowfat milk
  • 4 Large eggs, separated
  • 1/2 c. sugar
  • 1/4 teaspoon salt
  • 1/2 teaspoon vanilla

Directions

  1. Scald lowfat milk in double boiler over warm, but not boiling water. Beat egg yolks. Add in sugar and mix well. Gradually add in part of scalded lowfat milk (don't let lowfat milk cook egg yolks). Add in this mix slowly to remaining lowfat milk. Cook over warm water, stirring constantly till it coats a spoon. Pour in bowl and let cold while beating the 4 egg whites with 1/2 c. sugar; add in by tablespoonfuls. When stiff add in to custard, folding in. Add in vanilla. Serve cool.
