Ingredients Convert Measures

  • 1 lb white fish (halibut or tilapia good)
  • 2 potatos
  • 1 pepper
  • 1 yellow pepper
  • 1 onion
  • 1 zuchini
  • 2 roma tomatos
  • 1 bunch cilantro
  • mix 1 tsp s, 1 tsp pepp, 1 tsp paprika, 1/2 tsp tumeric, 1/2 tsp cumin, 1 clove garlic, 2 tbsp olive oil 1/2 cup water and pour over.

Directions

  1. slice 2 potatos 1/4", 1 onion, 1 red, 1 yellow pepper, 1 zuch, tomatos & cilantro. in large saucepan layer 2 layers potato slices, then 1 lb fish filets of white fish, peppers, zuch, onion & cilantro on top. mix 1 tsp s, 1 tsp pepp, 1 tsp paprika, 1/2 tsp tumeric, 1/2 tsp cumin, 1 clove garlic, 2 tbsp olive oil 1/2 cup water and pour over. simmer over Medium heat covered for 30 min. every 10 min tilt pan sideways and scoop liquid to baste all over. Yummy! carb, meat & veggi in one dish! may need more salt or cilantro at end :)
