Mint And Orange Syrup Recipe

Ingredients

  • 1 1/4 c. sugar
  • 1 1/2 c. water
  • 2 x peppermint or possibly spearmint sprigs
  • 2 x wide orange zest strips

Directions

  1. Combine the sugar and water in a saucepan and bring to a boil over medium heat. Drop in the mint sprigs and the orange zest. Reduce the heat and simmer for 2 to 3 min. Turn off the heat and allow the syrup to sit, undisturbed, for 2 hrs. Remove the mint and orange zest.
  2. Transfer the syrup to a glass jar and store it in the refrigerator. Add in 1 to 3 tsp. to each glass of tea.
  3. This recipe yields about 1 1/2 c..
  4. Comments: The mint tea which I love to drink in North Africa inspired this syrup, that when mixed with iced tea, adds a sweet, minty flavor with a touch of orange. But it doesn't have the cloying sweetness of the North African version.
  5. Yield: 1 1/2 c.
