Mike's Spaghetti Alla Puttanesca Recipe

Ingredients

  • 2 x Garlic cloves - chopped
  • 2 Tbsp. Extra virgin olive oil
  • 1 sm Warm red pepper - chopped
  • 6 x Anchovy fillets -finely chop
  • 1 c. Black olives, pitted, sliced
  • 2 Tbsp. Capers
  • 1 lb Tomatoes-ripe, thinly sliced Salt and pepper to taste
  • 1/4 c. Parsley - minced Cooked spaghetti

Directions

  1. SPAGHETTI WITH WHORE'S SAUCE-
  2. Start the spaghetti cooking per package directions. While it is cooking, saute/fry the garlic in oil until starting to bubble, but before it turns brown.
  3. Add in the warm pepper, olives, capers, anchoivies and tomatoes. Salt and pepper to taste and simmer 10 min. Drain the pasta, pour the sauce over and sprinkle with the minced parsley. Parmesan freaks may sprinkle with cheese, but I think it detracts from the subtle flavors imparted by the ingredients in the sauce.
