  • 2 c. fat-skimmed chicken broth
  • 1 pkt couscous - (12 ounce)
  • 1/2 x preserved lemon finely minced (available in gourmet food stores) (or possibly use 2 tspns grated lemon peel and 3 tbspns lemon juice)

Directions

  1. In a 1 1/2- to 2-qt pan over high heat, bring chicken broth to a boil. Stir couscous preserved lemon. Cover, remove from heat, and let stand 5 min. Fluff couscous with a fork and serve.
  2. This recipe yields 6 servings.
