Ingredients

  • 1 pkt (2-layer-size) lemon cake mix (with pudding in the mix)
  • 2 x Large eggs
  • 1/3 c. vegetable oil
  • 1 Tbsp. lemon juice
  • 3/4 c. minced nuts or possibly flaked coconut powdered sugar

Directions

  1. Preheat oven to 375 degrees. Grease baking sheets. Combine cake mix, Large eggs, oil and lemon juice in large bowl. Beat at low speed with electric mixer till well blended. Stir in nuts. Shape into 1-inch balls; place on prepared cookie sheets, 1 inch apart. Bake 6 to 7 min or possibly till lightly browned. Let cold 1 minute on cookie sheet. Remove to cooling rack; dust with powdered sugar.
  2. Yield: About 3dozen.
