,%20and%20sing%20a%20song%20from%20Mary%20Poppins.%20IT%20FINALLY%20HAPPENED.%20Daylight%20Savings%20Time%20(also%20referred%20to%20as%20%E2%80%9CThe%20Worst%20Idea%20Ever%E2%80%9D%20and%20%E2%80%9CA%20Reason%20to%20Move%20to%20Arizona%E2%80%9D)%20ended!%20The%20sun%20stayed%20out%20until%20almost%207pm!%20The%20sky%20was%20blue!%20My%20mood%20flipped%20like%20a%20light%20switch%20%E2%80%94%20the%20change%20was%20immediate.%3C/p%3E%3Cp%3EIt%20happened%20to%20also%20be%2066%20degrees%20here%20today,%20meaning%20I%20wasted%20no%20time%20after%20I%20woke%20up.%20I%20threw%20open%20the%20balcony%20door%20and%20let%20the%20breeze%20flow%20through%20the%20apartment,%20clearing%20the%20winter%20right%20out.%20Byrdie%20sat%20in%20the%20sunshine%20and%20enjoyed%20the%20day%20with%20me.%20Ahhhhh.%20You%20guys!!%20IT%E2%80%99S%20FINALLY%20SPRING.%3C/p%3E%3Cp%3EOkay,%20well,%20it%E2%80%99s%20finally%20spring%20here.%20I%20apologize%20%E2%80%94%20sincerely%20%E2%80%94%20to%20those%20of%20you%20still%20buried%20in%20snow.%20I%20might%20yet%20get%20my%20just%20deserts%20for%20being%20so%20giddy%20while%20you%E2%80%99re%20freezing%20your%20tails%20off,%20because%20North%20Carolina%20weather%20is%20notoriously%20unpredictable.%3C/p%3E%3Cp%3ESo%20QUICK,%20before%20the%20ice%20comes%20back%20and%20we%20have%208%20bajillion%20snow%20days%20and%20I%20have%20to%20wrap%20myself%20into%20my%20Snuggie%20like%20a%20burrito,%20let%E2%80%99s%20eat%20LEMON.%20LEMON%20and%20BLUEBERRY%20and%20SPRING.%20I%20don%E2%80%99t%20know%20how%20you%20eat%20spring,%20but%20I%20want%20to%20try.%3C/p%3E%3Cp%3EThis%20is%20another%20of%20my%20beloved%20gooey%20butter%20cakes,%20and%20probably%20my%20absolute%20favorite.%20Something%20about%20flavoring%20this%20texture%20of%20cake%20with%20lemon%20is%20so%20perfect.%20I%20piled%20it%20high%20with%20freshly%20whipped%20cream%20(I%20could%20eat%20a%20mountain)%20and%20blueberries%20(Mike%E2%80%99s%20favorite)%20and%20ate%20it%20right%20out%20of%20the%20skillet,%20as%20I%E2%80%99m%20wont%20to%20do.%20HAPPY%20SPRING!%20(If%20it%E2%80%99s%20going%20to%20be%20like%2035%20degrees%20tomorrow,%20don%E2%80%99t%20tell%20me.%20Just%20don%E2%80%99t.)%3C/p%3E%3Cp%3E1%20cup%20cake%20flour%203%20tablespoons%20granulated%20sugar%20%E2%85%93%20cup%20butter,%20cold%201%20teaspoon%20lemon%20zest%201%20cup%20granulated%20sugar%20%C2%BE%20cup%20(1%C2%BD%20sticks)%20butter,%20softened%201%20egg%201%20cup%20all-purpose%20flour%20%E2%85%94%20cup%20evaporated%20milk%20%C2%BC%20cup%20light%20corn%20syrup%20%C2%BD%20teaspoon%20vanilla%20extract%201%20teaspoon%20lemon%20extract%201%20teaspoon%20lemon%20zest%20powdered%20sugar%20for%20dusting%202%20cups%20heavy%20whipping%20cream%204%20heaping%20tablespoons%20powdered%20sugar%20fresh%20blueberries%20lemon%20zest%3C/p%3E%3Cp%3EMake%20the%20crust:%20Preheat%20oven%20to%20350%20degrees.%20Whisk%20together%20cake%20flour,%20zest,%20and%20sugar%20in%20a%20medium%20bowl.%20Cut%20in%20the%20butter%20with%20a%20pastry%20cutter%20or%20two%20knives%20until%20the%20mixture%20resembles%20fine%20crumbs%20and%20starts%20to%20cling%20together.%20Press%20the%20mixture%20into%20the%20bottom%20(this%20step%20is%20a%20lot%20harder%20than%20it%20sounds,%20but%20be%20patient%20and%20use%20the%20back%20of%20a%20spoon%20to%20help%20spread/press%20the%20mixture%20down.%20I%20also%20stuck%20mine%20in%20the%20fridge%20for%20a%20bit%20to%20make%20the%20butter%20less%20sticky)%20and%20up%20the%20sides%20of%20a%2010-inch%20cast%20iron%20skillet.%20Make%20the%20filling:%20Cream%20together%20the%20butter%20and%20sugar%20until%20fluffy%20and%20pale%20yellow%20(about%202-3%20minutes).%20Mix%20in%20the%20egg%20until%20just%20combined.%20Alternate%20adding%20the%20flour%20and%20evaporated%20milk,%20mixing%20after%20each%20addition.%20Mix%20in%20the%20corn%20syrup,%20vanilla%20extract,%20lemon%20extract,%20and%20lemon%20zest.%20Pour%20the%20filling%20into%20the%20crust%20and%20sprinkle%20the%20top%20with%20icing%20sugar.%20Bake%20and%20assemble%20the%20cake:%20Bake%20for%2030%20to%2040%20minutes%20or%20until%20cake%20is%20nearly%20set%20(mine%20was%20probably%20ready%20around%2035).%20Some%20jiggle%20is%20fine%20%E2%80%94%20do%20not%20overcook!%20It%E2%80%99ll%20finish%20setting%20up%20as%20it%20cools.%20Sprinkle%20some%20more%20powdered%20sugar%20on%20top.%20Let%20the%20cake%20cool%20in%20the%20skillet%20for%202%20hours.%20In%20the%20meantime,%20beat%20heavy%20cream%20and%202%20tablespoons%20powdered%20sugar%20together%20in%20a%20bowl%20to%20stiff%20peaks.%20Pile%20heaps%20of%20fresh%20blueberries%20into%20the%20center%20of%20your%20cooled,%20set%20gooey%20butter%20cake,%20top%20with%20a%20mountain%20of%20freshly%20whipped%20cream%20and%20lemon%20zest,%20and%20serve.%20%203.2.2925%3C/p%3E){kind=link}
