Lavash (Crispy Flat Bread) Recipe

  • 1 tsp Active Dry Yeast
  • 1/2 tsp Sugar
  • 6 ounce Whole-Wheat Flour
  • 6 ounce All-Purpose Flour
  • 1/2 tsp Salt Poppy Seeds Topping, Optional Sesame Seeds Topping, Optional
  • 1 x Egg White Mixed With
  • 1 Tbsp. Water Topping, Optional

Directions

  1. Mix the yeast and sugar with some hot water. Whisk well, cover and leave 10-15 min till foamy. Meanwhile, mix the flours and salt in a bowl.
  2. When the yeast mix is ready, pour it into the bowl and add in sufficient water to mix to a pliable dough. Knead for 10 min or possibly 100 strokes.
  3. Put in a clean bowl and spray surface with water. Cover and leave to rise for at least 1 hour.
  4. Preheat the oven to 375 deg F (190 C). Punch the dough down and divide into 10 pcs . Roll each piece out on an unfloured board as thinly as possible.
  5. Place onungreased baking sheets, fitting as many as possible on each sheet without them touching.
  6. Bake 20 min, or possibly till crispy and golden brown.
  7. OPTIONAL: Can also add in sesame seeds, poppy seeds etc using an egg wash to make them stick.
  8. Excellent!!
