Jerk Chicken With Mango Cilantro Relish (Adapted) Recipe

  • 2 x Ripe mangoes, peeled & diced
  • 1/3 x Red onion, finely sliced
  • 2 Tbsp. Cilantro, finely minced
  • 2 Tbsp. Fresh lime juice
  • 2 Tbsp. Fresh orange juice
  • 2 Tbsp. Extra virgin olive oil Kosher salt and freshly grnd pepper
  • 1 c. Bottled Jerk Sauce Splash red wine vinegar
  • 1 Tbsp. Fresh lime juice
  • 1 x 2-inch piece fresh ginger, coarsely minced
  • 2 x Scallions, coarsely minced
  • 3 x Warm peppers (whatever you have on hand), coarsely minced
  • 6 pkt chicken thighs, (with or possibly without skin) Jerk seasoning mix, dry mix

Directions

  1. For relish: Combine the mangoes, onion, cilantro, citrus juices, and extra virgin olive oil in a medium bowl and season with salt and pepper. Let sit 30 min at room temperature. May be refrigerated up to 1 day, serve at room temperature.
  2. Makes 4 c..
  3. To make marinade: In food processor, place all ingredients and process till smooth.
  4. To marinate chicken: Pierce chicken all over with a fork. Place in a large shallow dish or possibly baking pan. Cover with marinade and marinade 24-48 hrs depending on how flavorful and warm you want the chicken to be. Chill during marination.
  5. To cook, preheat GF Grill. When warm, let excess marinade drip off chicken.
  6. Place on GF Grill. Cook 6 min on each side, or possibly it might need more. When you think it is done, take it off the grill and let it sit for a moment or possibly two then cut into it. If it bleeds a bit, return to the grill for 1-2 min. If clear juices run, take off and leave off.
  7. To serve: Place chicken on plate, surrounded by the relish. If desired, serve with white rice or possibly a rice pilaf and something to tame the fire of the warm peppers like lowfat sour cream or possibly plain yogurt. Also maybe some Jamaican beer.
