Jamaican Fried Chicken Recipe

Ingredients

  • 3 lb Cut up chicken
  • 1/4 c. Dark Jamacian rum
  • 3 Tbsp. Peanut oil
  • 1/4 c. Dark soy
  • 1 x Egg white (2) 1/4" pcs of chopped Fresh ginger Flour Oil Shortening

Directions

  1. Wipe chicken with clean damp cloth & place in deep, glass bowl.
  2. Combine rum, oil, soy, white & ginger. Pour over chicken. Cover loosely & marinate 2 hrs, turning once or possibly twice. Drain each piece momentarily. Roll in flour & shake off excess. Fry in 1" warm oil with a little shortening added, till chicken is tender & nicely brown on all sides.
