%20produces%20a%20melt-in-your-mouth%20tender%20beef%20that%20is%20oh-so-good!%3C/p%3E%3Cp%3EI%20first%20tasted%20corned%20beef%20sinigang%20in%20the%20Philippines%20about%2016%20years%20ago.%20I%20cannot%20remember%20exactly%20if%20it%20was%20a%20few%20days%20before%20my%20wedding%20day%20(November%2022,%202003)%20or%20a%20few%20days%20after.%20I%20just%20remember%20%20my%20dear%20friend%20Jess%20highly%20recommending%20this%20restaurant%20in%20Makati%20called%20%E2%80%9CSentro%E2%80%9D%20which%20served%20this%20delightful%20soup.%20So,%20the%20entire%20wedding%20crew%20went%20there%20based%20on%20his%20recommendation.%20When%20I%20say%20wedding%20crew,%20that%E2%80%99s%20me,%20hubby,%20his%20entourage%20from%20England,%20the%20bridesmaids%20and%20best%20men%20and%20some%20of%20my%20friends.%20There%20were%20a%20lot%20of%20us%20there.%20I%20can%20imagine%20how%20happy%20the%20restaurant%20manager%20must%20have%20been%20because%20it%20was%20lunch%20time%20and%20there%20were%20a%20lot%20of%20us%20that%20came%20in%20during%20a%20not%20so%20busy%20day%20and%20hour.%20At%20any%20rate,%20since%20I%20was%20already%20a%20huge%20sinigang%20fan%20anyway%20I%20thought%20I%E2%80%99d%20give%20it%20a%20try.%20I%20was%20a%20bit%20risking%20it%20with%20my%20husband%20and%20his%20family%20and%20friends%20%E2%80%99cause%20I%20wasn%E2%80%99t%20sure%20how%20they%20would%20like%20it.%20Thankfully,%20everyone%20loved%20it!%3C/p%3E%3Cp%3EIt%E2%80%99s%20funny%20how%20I%20never%20would%20have%20given%20corned%20beef%20sinigang%20a%20thought.%20Or%20I%20wouldn%E2%80%99t%20have%20thought%20of%20making%20it%20at%20all.%20Sinigang,%20in%20case%20you%E2%80%99re%20wondering%20what%20it%20is,%20is%20a%20Filipino%20soup%20or%20stew%20known%20for%20its%20sour%20and%20savoury%20taste,%20the%20tangy%20sharp%20flavor%20comes%20from%20the%20tamarind%20fruit.%20It%20is%20one%20of%20the%20most%20popular%20soups%20in%20the%20archipelago.%20The%20more%20sour%20it%20is%20%E2%80%93%20the%20better!%20Oh,%20I%20can%20almost%20taste%20it%20as%20I%20write!!!%3C/p%3E%3Cp%3EThe%20reason%20I%20would%20never%20have%20imagined%20making%20sinigang%20with%20corned%20beef%20is%20because%20it%20often%20associated%20with%20pork.%20We%20would%20make%20this%20soup%20with%20pork%20belly%20and%20the%20fat%20in%20the%20pork%20belly%20melts%20into%20the%20soup%20as%20it%20is%20slowly%20cooked%20(can%20you%20imagine%20how%20delish%20that%20is!!!).%20But%20then,%20so%20it%20doesn%E2%80%99t%20have%20a%20greasy%20kind%20of%20texture%20or%20taste%20%E2%80%93%20we%20add%20tamarind%20juice,%20loads%20of%20it,%20which%20balances%20the%20fattiness%20coming%20from%20the%20meat.%20Of%20course,%20to%20make%20it%20healthier,%20we%20totally%20load%20it%20with%20vegetables.%20It%E2%80%99s%20just%20absolutely%20perfect!%3C/p%3E%3Cp%3EThe%20main%20souring%20agent%20for%20the%20sinigang%20is%20tamarind%20which%20is%20squeezed%20to%20obtain%20its%20potently%20tangy%20juices.%20The%20tamarind,%20if%20you%20want%20to%20use%20it,%20may%20be%20purchased%20fresh%20or%20in%20concentrate%20form%20in%20Asian%20groceries.%20A%20short%20cut,%20if%20you%20can%E2%80%99t%20find%20tamarind,%20is%20to%20use%20a%20sinigang%20soup%20mix%20like%20Knorr%20and%20this%20is%20readily%20available%20in%20Asian%20stores%20as%20well.%20But%20don%E2%80%99t%20fret,%20if%20you%20can%E2%80%99t%20find%20either%20or%20live%20far%20away%20from%20an%20Asian%20store%20%E2%80%93%20you%20have%20fresh%20lemon%20and%20lime%20to%20the%20rescue.%20Use%20the%20juices%20of%202-3%20whole%20lemons%20or%20limes%20or%20a%20combo.%20Both%20would%20give%20you%20the%20tanginess%20that%20this%20soup%20is%20well%20known%20for.%20There%20is%20no%20exact%20amount%20on%20how%20sour%20it%20should%20be%20%E2%80%93%20use%20your%20taste%20buds.%20I%20personally%20love%20it%20super%20sour%20but%20hubby%20doesn%E2%80%99t%20so%20I%20try%20to%20find%20a%20middle%20ground.%20Of%20course,%20serve%20this%20with%20some%20soy%20sauce%20mixed%20in%20with%20some%20finely%20chopped%20red%20chili%20for%20that%20extra%20savory-spicy%20kick!!!%20Serve%20with%20loads%20of%20rice,%20too!%3C/p%3E%3Cp%3EInstant%20Pot%20Sinigang%20na%20Corned%20Beef%20(Corned%20Beef%20Sour%20Soup)%3C/p%3E%3Cp%3EThis%20has%20now%20become%20a%20classic%20favorite%20in%20my%20household.%20Use%20your%20corned%20beef%20and%20turn%20it%20into%20this%20delicious%20and%20hearty%20soup%20loaded%20with%20vegetables%20with%20a%20tangy%20mouth-puckering%20flavor%20that%20would%20leave%20your%20tastebuds%20asking%20for%20more!%20Made%20even%20easier%20in%20the%20Instant%20Pot%20-%20this%20Sinigang%20na%20Corned%20Beef%20(Corned%20Beef%20Sour%20Soup)%20produces%20a%20melt-in-your-mouth%20tender%20beef%20that%20is%20oh-so-good!%3C/p%3E%3Cp%3E1%3C/p%3E%3Cp%3Esliced%3C/p%3E%3Cp%3E3%3C/p%3E%3Cp%3EPlum%20Tomatoes,%3C/p%3E%3Cp%3Equartered%3C/p%3E%3Cp%3E1%3C/p%3E%3Cp%3EJapanese%20Eggplant,%3C/p%3E%3Cp%3Esliced%20(optional)%3C/p%3E%3Cp%3E8%3C/p%3E%3Cp%3EOkra%3C/p%3E%3Cp%3E(optional)%3C/p%3E%3Cp%3E1%3C/p
