Hummus & Greek Salad Recipe

I decided to go healthy one night and went Arabic and Greek! Some of you may be familiar with hummus which is made from chick peas and the latter is pretty simple using feta cheese and lots of other fresh produce. Both are to be eaten with kubus (pita bread). The Greek salad was inspired by a book titled Vegetarian by Love Food.

Directions

  1. Hummus:
  2. Add all the ingredients (including the water from the chick peas) in a blender until a smooth paste. Transfer into a bowl and drizzle some olive oil and garnish with olives.
  3. Greek Salad:
  4. For the dressing, put all the ingredients in a large bowl and mix well.
  5. Add the remaining ingredients and toss together coating well with the dressing.
  6. Serve the hummus and salad with pita bread.
