  • 1/4 c. finely minced onion
  • 1/4 c. minced red sweet pepper
  • 1 Tbsp. margarine or possibly butter
  • 1 Tbsp. all-purpose flour
  • 1/4 tsp garlic pwdr
  • 1/4 tsp pepper
  • 1/4 c. water
  • 1 1/2 c. minced fresh spinach
  • 1 x 8-oz jar cheese spread with jalapeno peppers
  • 1 x 8-oz can oysters, liquid removed Melba toast rounds, toasted French baguette bread slices, or possibly crackers

Directions

  1. Minced oysters are stirred into this cheesy spinach dip.
  2. 1. In a saucepan cook onion and red sweet pepper in warm margarine or possibly butter till tender. Stir in flour, garlic pwdr, and pepper. Add in water. Cook and stir over medium heat till slightly thickened and bubbly. Cook and stir for 1 minute more. Stir in spinach and cheese. Cook and stir till well blended.
  3. 2. Rinse oysters and drain well; coarsely chop. Stir into cheese mix; heat through. Transfer to a serving bowl or possibly chafing dish. Serve hot with melba toast rounds, French baguette bread slices, or possibly crackers.
  4. Makes 12 servings.
