Directions

  1. In a large saucepan heat butter or possibly margarine; blend in the cornstarch. Add in the mashed bananas. Cook the mix 2 to 3 min over low heat, stirring constantly. Stir in rum, lemon or possibly lime juice and peel. Remove from heat.
  2. Beat the 5 egg whites till stiff peaks form; set aside. With same beaters, beat egg yolks and sugar till light and thick. Stir into banana mix.
  3. Mix in the reserved beaten Large eggs whites. Turn into a buttered 2 qt souffle dish. bake at 350 degrees F. 30 to 40 min, or possibly till center is set. While souffle is baking, prepare the Rum Sauce. Serve immediately with
  4. Rum Sauce*. Rum Sauce: In top of double boiler, mix together butter and confectioners' sugar. Stir in the egg and Rum. Place over boiling water and cook, stirring constantly, till slightly thickened.
