Ingredients
- Hemp Oatmeal Cookies
- 1/3 c. coconut oil (in solid form)
- 1 c. sugar
- 1 egg
- 1 t. pure vanilla extract
- 3/4 c. unbleached white flour
- 1/2 c. hulled hemp seeds
- 1 t. baking soda
- 3/4 c. old fashioned oats
- 3/4 c. dried fruit (I used dried cranberries.)

%3C/p%3E%3Cp%3EBy%20Eliot,%20on%20March%204th,%202015%3C/p%3E%3Cp%3EI%20was%20making%20some%20bread%20this%20past%20weekend%20that%20called%20for%20a%20variety%20of%20seeds.%20%20As%20I%20was%20cleaning%20out%20the%20freezer%20to%20see%20what%20seeds%20I%20had%20on%20hand,%20I%20found%20a%20package%20of%20hulled%20hemp%20seeds.%20%20%20I%20made%20the%20bread%20with%20all%20the%20seeds%20I%20had%20on%20hand%20and%20then%20I%20flipped%20over%20the%20bag%20of%20hemp%20seeds%20and%20found%20an%20intriguing%20recipe.%20%20%20I%20modified%20the%20recipe%20a%20bit%20by%20using%20coconut%20oil%20%20and%20adding%20some%20dried%20fruit.%3C/p%3E%3Cp%3EThe%20results%20speak%20for%20themselves.%3C/p%3E%3Cp%3EPreheat%20oven%20to%20350%20degrees%20F.%20Cream%20together%20coconut%20oil%20and%20sugar%20until%20smooth.%20%20%20Add%20egg%20and%20vanilla%20and%20beat%20until%20creamy.%3C/p%3E%3Cp%3EIn%20a%20separate%20blow%20add%20flour,%20hemp%20seeds,%20soda,%20%20and%20oats%20and%20whisk%20together.%3C/p%3E%3Cp%3EAdd%20the%20dry%20ingredients%20to%20the%20creamed%20mixture%20and%20mix%20until%20incorporated.%20%20Add%20fruit%20and%20blend%20a%20bit%20more.%3C/p%3E%3Cp%3EUsing%20a%20medium%20cookie%20scoop,%20form%20into%20balls%20and%20place%20on%20a%20parchment%20or%20silpat%20lined%20baking%20sheet.%3C/p%3E%3Cp%3EBake%20for%2012-15%20minutes.%20%20%20When%20done,%20let%20cookies%20cool%20on%20baking%20sheet%20for%202-3%20minutes.%20%20Remove%20to%20wire%20cooling%20racks.%3C/p%3E%3Cp%3EHow%20would%20I%20describe%20these%20cookies?%20%20The%20dough%20is%20a%20bit%20crumbly%20so%20I%20think%20using%20a%20cookie%20scoop%20is%20important.%20%20%20Since%20there%20is%20no%20brown%20sugar,%20the%20taste%20resembles%20a%20traditional%20sugar%20cookie.%20%20%20The%20hemp%20and%20oatmeal%20obviously%20give%20the%20cookie%20some%20texture%20and%20I%20don%E2%80%99t%20think%20I%20would%20have%20liked%20them%20as%20much%20without%20the%20dried%20cranberries.%20%20%20Definitely%20need%20a%20dried%20fruit%20of%20some%20sort%20here.%3C/p%3E%3Cp%3EI%20know%20my%20grandmother%20didn%E2%80%99t%20even%20know%20what%20hemp%20was,%20but%20these%20taste%20remarkably%20like%20a%20cookie%20she%20made%20for%20us.%20%20This%20tray%20is%20one%20of%20my%20prized%20possesions%20from%20her.%3C/p%3E%3Cp%3ELike%20Loading...%3C/p%3E){kind=link}
