Directions

  1. Place split peas in large soup pot with ham bone. Add in water. Saute/fry carrots, onion and celery in butter till tender. Add in to pas. Add in remaining ingredients except spinach and green peas. Bring to a boil; cover and simmer 30 min. Add in spinach and green peas, simmer 30 more min. Remove ham bone and bay leaf.
  2. Variation: After cooking, soup may be pureed in blender if smooth consistency is preferred.
