Directions

  1. Cut ham into small dice. Chop scallion. Cut butter in 4 chunks. Bring butter, water, 1/4 tsp salt and 1/2 tsp pepper to a boil in a saucepan and boil just till butter melts. Remove from heat and stir in flour all at once. Stir over low heat just till smooth and comes away from sides of pan in a ball. While still hot, transfer to a food processor or possibly mixing bowl and process or possibly beat in large eggs one at a time. Stir in ham, scallion, corn and sage. Heat the oil in a large pot or possibly deep fryer to 375 degrees. Drop the dough by heaping tablespoonfuls into hot oil and fry till golden brown. Drain on paper towels.
