.%20%20Less%20expensive%20vegetables%20likes%20onions%20were%20used%20in%20generous%20amounts.%20%20A%20long%20cooking%20process%20further%20ensured%20the%20meat%20would%20be%20tender.%20%20Hachee%20remains%20a%20popular%20and%20much-loved%20dish%20in%20the%20Netherlands.%20%20So%20much%20so%20that%20you%20can%20find%20it%20ready-made%20in%20grocery%20stores.%20%20But%20nothing%20beats%20homemade,%20and%20your%20patience%20in%20the%20long,%20slow%20cooking%20process%20will%20yield%20results%20that%20you%E2%80%99re%20entire%20family%20will%20love.%3C/p%3E%3Cp%3EThe%20flavor%20profile%20of%20Hachee%20is%20significantly%20different%20from%20the%20traditional%20beef%20stews%20we%20know%20here%20in%20the%20U.S..%20Hachee%20uses%20equal%20parts%20of%20beef%20and%20onion%20and%20the%20onions%20are%20caramelized.%20%20The%20featured%20flavors%20in%20this%20stew%20are%20cloves,%20juniper%20berries,%20black%20peppercorns,%20bay%20leaves%20and%20vinegar%20%E2%80%93%20all%20of%20which%20come%20together%20to%20provide%20a%20wonderful%20depth%20of%20flavor%20that%20is%20both%20rich%20and%20comforting.%20%20The%20flavor%20of%20Hachee%20shares%20similarities%20with%20German%20Sauerbraten.%3C/p%3E%3Cp%3EI%20made%20this%20last%20week%20when%20my%20husband%E2%80%99s%20family%20came%20to%20WA%20for%20a%20visit.%20%20My%20father-in-law%20lived%20in%20the%20Netherlands%20for%20two%20years%20as%20a%20young%20man%20and%20fell%20in%20love%20with%20the%20country,%20its%20people,%20and%20its%20food.%20%20Many%20of%20the%20dishes%20he%20enjoyed%20then%20he%20hasn%E2%80%99t%20had%20since%20%E2%80%93%20almost%2040%20years%20later%20%E2%80%93%20a%20fact%20he%20often%20laments.%20%20(Sorry%20for%20alluding%20to%20your%20age,%20John.)%20%20So%20I%20wanted%20to%20surprise%20him%20with%20a%20traditional%20Dutch%20meal.%20%20I%20narrowed%20it%20down%20to%20three%20options:%20%20Boerenkool%20Stampot,%20Hutspot,%20and%20Hachee.%20%20I%20decided%20on%20Hachee.%20%20It%E2%80%99s%20a%20little%20more%20interesting,%20plus%20you%20can%E2%80%99t%20find%20the%20smoked%20Dutch%20sausages%20(rookworst)%20here%20that%20are%20traditionally%20eaten%20with%20the%20other%20two%20dishes.%20%20And%20it%20also%20gave%20me%20the%20excuse%20to%20finally%20make%20the%20braised%20red%20cabbage%20with%20it%20%E2%80%93%20a%20side%20dish%20that%20is%20equally%20popular%20in%20Germany%20(Rotkohl)%20and%20that%20several%20of%20my%20readers%20have%20asked%20me%20about.%20%20My%20father-in-law%20readily%20recognized%20the%20dish.%20%20%E2%80%9DThis%20is%20the%20dish%20I%20had%20almost%20every%20night%20during%20my%20first%20two%20months%20in%20the%20Netherlands!%E2%80%9D%20%20And%20he%20hadn%E2%80%99t%20had%20it%20since%20until%20now.%20%20We%20all%20really%20enjoyed%20this%20Hachee.%20And%20the%20leftovers%20the%20next%20day,%20after%20the%20flavors%20had%20even%20more%20time%20to%20meld,%20were%20even%20better.%3C/p%3E%3Cp%3ELet%E2%80%99s%20get%20started!%3C/p%3E%3Cp%3ECube%20the%20beef%20and%20pat%20it%20dry%20with%20a%20paper%20towel%20%E2%80%93%20this%20will%20ensure%20that%20it%20browns%20well.%20%20Sprinkle%20with%20a%20little%20salt%20and%20pepper.%3C/p%3E%3Cp%3EChop%20the%20onions.%3C/p%3E%3Cp%3EBrown%20the%20beef%20in%20a%20Dutch%20oven.%20%20Brown%20the%20cubes%20on%20all%20sides.%20%20Brown%20in%20batches%20so%20as%20not%20to%20overcrowd%20the%20beef%20%E2%80%93%20that%20will%20prevent%20it%20from%20browning%20properly.%20%20Remove%20the%20beef%20and%20set%20aside,%20leaving%20the%20burnt%20bits%20on%20the%20bottom%20of%20the%20pan%20%E2%80%93%20those%20will%20provide%20a%20lot%20of%20flavor%20to%20the%20stew.%3C/p%3E%3Cp%3EAdd%20some%20more%20butter%20and%20caramelize%20the%20onions%20until%20golden%20brown.%20%20Add%20the%20flour%20and%20stir%20to%20combine.%3C/p%3E%3Cp%3EAdd%20the%20beef%20to%20the%20onions.%3C/p%3E%3Cp%3EAdd%20the%20beef%20broth%20and%20the%20seasonings.%20%20Bring%20to%20a%20boil,%20reduce%20the%20heat%20to%20low,%20cover%20and%20simmer%20for%202%201/2%20hours.%20%20Uncover%20and%20simmer%20for%20another%2030%20minutes%20to%20help%20thicken%20the%20sauce.%20%20If%20it%20needs%20further%20thickening,%20make%20a%20slurry%20with%20equal%20parts%20of%20flour%20and%20water%20and%20stir%20it%20into%20the%20stew,%20stirring%20constantly%20to%20prevent%20lumping.%20%20Return%20to%20a%20simmer%20until%20the%20stew%20is%20thickened.%20%20Add%20salt,%20pepper%20and%20more%20red%20wine%20vinegar%20to%20taste.%3C/p%3E%3Cp%3EHachee%20is%20traditionally%20served%20with%20aardappelen%20(potatoes)%20and%20rode%20kool%20met%20appeltjes%20(braised%20red%20cabbage%20with%20apples%20%E2%80%93%20recipe%20to%20come!)%20%20A%20serving%20of%20applesauce%20is%20also%20common.%20%20Eet%20smakelijk!%3C/p%3E%3Cp%3EHachee%20(Dutch%20Beef%20&%20Onion%20Stew)%3C/p%3E%3Cp%3ETotal%20time%3C/p%3E%3Cp%3E3%20hours%2030%20mins%3C/p%3E%3Cp%3E:%20The%20Daring%20Gourmet,%20www.daringgourmet.com%3C/p%3E%3Cp%3EMelt%20the%20butter%20in%20a%20Dutch%20oven%20over%20medium-high%20heat
