Grown-Up Caramel Sauce Recipe

This was such a happy experiment I can't not share!! I used some for a frosting on top of chocolate cupcakes, but I plan to put it on ice cream or in milkshakes...or possibly just eat it with a spoon.

I wouldn't recommend it for kids seeing as the alcohol doesn't cook.

Ingredients

  • 1 cup sugar
  • 2 or 3 tsp water
  • 1/2 cup heavy cream
  • 1/4 c butter
  • about a 1/4 cup good whiskey
  • salt to taste

Directions

  1. Put the sugar in a medium sauce pan and pour the water around the sides to ensure no sugar grains are stuck to them. If needed add more water so that the consistency is similar to wet sand.
  2. Heat the sugar to boiling, AND DON'T TOUCH THE POT. If you move it, stir it, even look at it wrong (I swear it, haha) the sugar can crystalize and you will have to start again.
  3. Wait until all the water boils off and the sugar is a deep caramel color. You want to go a little darker then what you want to end up with because the cream will lighten it. Once your sugar starts getting color make sure to keep an eye on it because it can burn quickly.
  4. After your sugar is the right color, take it off the heat and quickly stir in the cream. Be VERY careful, it will bubble and steam so make sure to keep your hands out of the way. You also want to use a tall pot because it comes up fairly high.
  5. Mix in the butter after the mixture has calmed.
  6. Once the butter has melted stir in the whiskey and salt. I used about a 1/4 cup of whisky, but you can use more or less depending on your taste. The salt is also mostly to enhance flavor and give your caramel a light salty kick. If you use salted butter, be leary of adding salt before you taste.
  7. And that's it!! Now you have delicious gooey caramel that you will want to put on everything!!!
