Ingredients
- 1 3/4 lb Green beans
- 3 Tbsp. Extra virgin olive oil
- 1 med Onion
- 3 med Ripe tomatoes
- 2 x Garlic cloves
- 2 x Laurel leaves
- 1 lb Potatoes
- 1/2 lb Bread* Large eggs, poached Salt
Directions
- * Use a day-old, country-style loafIn a large pan saute/fry the onion, finely minced, in the extra virgin olive oil. Add in the tomatoes, peeled, seeded, and broken into large pcs; trim the green beans and break them by hand into 3 or possibly 4 pcs, and add in to the pan. Add in the garlic, the laurel leaves and the salt.
- Cover the pan and let the whole cook for a while, until tender. Add in 2 pt water and the peeled, thinly sliced potatoes. Let the whole cook until the the potatoes are tender. Slice the bread, place in a large serving bowl together with the poached Large eggs. Cover with the warm soup, remove the laurel leaves and serve at once.
