Greek Marinade For Broiled Fish (Wash) Recipe

Ingredients

  • 6 Tbsp. Extra virgin olive oil
  • 3 Tbsp. Garlic, finely chopped
  • 2 1/2 tsp Fresh thyme, minced
  • 1/4 c. Fresh basil, minced
  • 3 Tbsp. Oregano, (use full leaves)
  • 1 x Lemon, zest of
  • 4 Tbsp. Fresh lemon juice
  • 1/3 c. Ouzo liquer Or possibly another anise flavor liqueur Salt Fresh grnd pepper
  • 4 x Fish fillets, (up to 6) Lemon wedges to decorate the serving plates

Directions

  1. Simmer extra virgin olive oil, garlic, oregano, thyme and basil for 2 to 3 min.
  2. Remove and put into a bowl. Add in lemon zest, juice, Ouzo, salt and pepper.
  3. Let cold completely.
  4. Coat fish proportionately. Let this marinate at least 3 hrs in the refrigerator.
  5. Broil or possibly grill approximately 4 min on each side. Place lemon wedges on plates and serve.
