Grandpa's Southern Green Bean Dinner Recipe

Ingredients

  • 2-3 lbs. fresh green beans
  • 1/2 pound bacon, diced
  • 1 med. onion, diced
  • 2-3 potatoes, diced
  • 1 lg. (32 ounce.) can chicken broth
  • Sufficient water to keep liquid sufficient for cooking
  • 1 tbsp. butter
  • Salt and pepper to taste

Directions

  1. Saute/fry bacon and onion in butter till bacon is just beginning to brown - not crisp. Add in green beans and stir well for 3-4 min. Add in chicken broth and sufficient water to cover green beans.
  2. Simmer gently till green beans begin to feel tender. Add in potatoes and salt and pepper. Stir gently several times, keep sufficient liquid in pot to cook potatoes. Stop cooking when potatoes are tender. Check seasonings. This is good served with sliced tomatoes and corn on the cob.
