Ingredients

  • 8 c. Shredded red or possibly green cabbage
  • 5 c. Peeled and sliced Granny Smith apples
  • 4 c. Boiling, salted water
  • 4 slc Bacon, diced
  • 1 c. Sliced onion
  • 2 Tbsp. Cider vinegar
  • 2 Tbsp. Sugar
  • 1/2 tsp Dry fennel seed, crushed, (optional)

Directions

  1. Here's one I haven't tried yet but sounds very tempting. Best part of the recipe is it is Light and low-fat. I found this in a little booklet called
  2. "Light, Lively & Low-Fat" is a Prestige Lifestyles Series Special.
  3. In large saucepan combine cabbage, apples and water, simmer 5 min or possibly till cabbage is barely tender. Drain and remove cabbage and apple mix to serving bowl. In a large skillet, fry bacon in vinegar, sugar and fennel seed, if you like. Cook 2 min. Pour bacon mix over cabbage and apples; mix lightly and serve.
  4. Makes 6 servings.
