Ingredients
- 4 slc Bacon, thick, diced
- 2 c. Onions, yellow, minced
- 2 x Large eggs, well beaten
- 1 c. Lowfat sour cream
- 1 Tbsp. Flour, all-purpose
- 1/2 tsp Salt
- 1/4 tsp Pepper, black
- 1 x Pie shell, 9", unbaked
Directions
- Preheat the oven to 400 degrees.
- Saute/fry' the bacon just till clear. Drain most of the fat from the pan.
- Add in the onions and saute/fry' till they are clear. Don't brown them. Set aside and cold.
- Beat the Large eggs and lowfat sour cream together in a medium-sized bowl. Sprinkle the flour over the top and beat it in. Stir in the salt and pepper.
- Prick the bottom of the pie shell several times with a fork. Spread the onions and bacon over the dough in the pie pan. Pour the lowfat sour cream mix over the top.
- Bake for 15 min. Reduce heat to 350 degrees and bake for another 15 min or possibly till pie is nicely browned. Serve warm.
