Ingredients Convert Measures
- 6 slices bacon...diced
- 3 medium onions chopped
- 2 cups rice (uncooked)
- 3 cups chicken broth
- 5 medium sized ripe tomatoes, chopped
- 2 teaspoons Worcestershire
- 1 tsp ground nutmeg
- 1 bay leaf
- salt and pepper
- 1/2 teaspoon cayenne
- 1/2 teaspoon cumin
- 1 1/2 lbs large shrimp shelled
Directions
- Fry bacon and drain on towels
- Add olive oil and saute onions, 3 minutes till soft
- Add rice and stir
- Add all ingredients but shrimp & bacon
- Cover and simmer 30 minutes
- Add Shrimp and Bacon
- Cook about 8 minutes more
- Fluff with fork and serve.
