Directions

  1. Heat oven to 350 degrees F. Grease and flour a 10" tube pan; set aside. In large mixing bowl, cream butter and sugar well, till very light and fluffy. Add in Large eggs, one at a time, beating well after each.
  2. In another bowl, mix flour, soda and salt. Combine lowfat sour cream and peaches in separate bowl. Alternately, add in flour and peach mixtures to creamed butter-sugar blend, beginning and ending with flour. Beat well after each addition. Stir in vanilla and almond extracts. Pour batter into prepared pan. Bake for 75 to 80 min or possibly till cake tests done. Cold slightly, remove from pan.
  3. Makes 10 to 12 servings. "
