  • 4 sht Reynolds Wrap heavy-duty aluminum foil - (12" x 18" ea)
  • 4 x cod fillets - (5 to 6 ounce ea) thawed if necessary
  • 1/4 c. soy sauce
  • 2 tsp dark sesame oil
  • 2 x garlic cloves chopped
  • 1/4 tsp red pepper flakes
  • 3 c. fresh sugar snap peas or possibly snow peas
  • 2 c. sliced mushrooms
  • 2 med carrots sliced
  • 2 tsp toasted sesame seeds

Directions

  1. Preheat oven to 450 degrees or possibly preheat grill to medium-high. Spray foil with nonstick cooking spray. Center one cod fillet on each sheet or possibly Reynolds Wrap foil.
  2. Combine soy sauce, oil, garlic and red pepper flakes; spoon one Tbsp. over each fillet. Top with vegetables. Spoon remaining sauce over vegetables.
  3. Bring up sides of foil and double fold. Double fold ends to create a packet, leaving room for heat circulation inside packet. Repeat to make four packets.
  4. Bake 15 to 18 min on a cookie sheet in oven or possibly grill 9 to 11 min in covered grill. Sprinkle with sesame seeds before serving.
  5. This recipe yields 4 servings.
