Garlic Roasted Pork (Torresmos) Recipe

Ingredients

  • 1/2 lb fresh medium-warm red peppers such as jalapenos, seeded and stemmed
  • 1 Tbsp. salt
  • 1/4 c. sweet or possibly warm paprika
  • 10 x garlic cloves minced
  • 1/2 c. white wine
  • 1/4 c. red wine
  • 4 lb boneless pork butt cut 8 pcs
  • 1/2 c. oil Salt to taste Freshly-grnd black pepper to taste

Directions

  1. Mince peppers and salt in bowl of food processor fitted with metal blade. Combine chopped peppers with paprika, garlic, white wine and red wine in large bowl. Add in pork pcs, turning to coat well. Cover with plastic wrap and chill 24 hrs.
  2. Remove pork from marinade. Pour oil in large roasting pan, add in pork, season with salt and pepper and roast at 375 degrees 1 hour. Turn pork often to keep moist. Reduce heat to 325 degrees and cook till pork is nicely browned, another 15 to 20 min.
  3. Serve this with Classic Portuguese Beans (see recipe).
  4. This recipe yields 8 servings.
