Ingredients
- 10 ounce Plain flour
- 2 x -(up to)
- 3 Tbsp. Piquin chiles, crushed
- 1 tsp Salt
- 1 tsp Freshly grnd black pepper
- 16 ounce (fl) grnd nut oil (vegetable oil will do)
- 8 piece chicken
- 16 ounce (fl) buttermilk
Directions
- Combine flour, chiles and salt and pepper in a shallow bowl. Heat the oil in a deep saucepan till very warm. (The oil is warm sufficient if a little lour dropped into it starts to bubble and cook immediately.) Dip a piece of chicken into the flour mix, coating all sides, then into the buttermilk and back into the flour mix. Carefully put into the warm oil and repeat with 1-2 more chicken pcs. Don't crowd the pan. Cook chicken pcs till done and drain on kitchen paper. (To test if cooked, insert a knife into a piece of chicken, if the juices run clear, it is done.) Repeat with remaining chicken pcs till all cooked.
