%20Bon%20Appetit,%20I%20knew%20it%20would%20be%20a%20classic%20in%20my%20repertoire.%20%20%20It%20looked%20like%20pound%20cake,%20but%20with%20a%20lighter%20crumb,%20and%20the%20fact%20that%20it%20contained%20Greek%20yogurt%20as%20well%20as%20many%20other%20ingredients%20common%20to%20my%20pantry,%20made%20it%20immediately%20attractive.%3C/p%3E%3Cp%3EI%20made%20the%20recipe%20last%20spring%20and%20it%20met%20my%20high%20expectations.%20%20No%20heavy%20mixers%20were%20dragged%20out%20of%20cabinets,%20it%20could%20be%20made%20in%20minutes,%20and%20it%20froze%20well.%20%20This%20latter%20point%20being%20critical%20since,%20as%20a%20two%20person%20household,%20we%20rarely%20are%20able%20to%20eat%20a%20whole%20cake%20or%20bread%20loaf%20before%20it%20becomes%20stale.%20%20The%20cake%E2%80%99s%20versatility%20as%20a%20sweet%20breakfast,%20an%20afternoon%20snack,%20or%20even%20dessert%20was%20just%20another%20point%20in%20its%20favor.%3C/p%3E%3Cp%3EThe%20recipe%20also%20seemed%20to%20lend%20itself%20to%20adaptation%20a%20point%20that%20Brit%20(of%20the%20Kitchen%20Bee)%20and%20I%20set%20to%20prove%20last%20summer.%20%20Brit,%20about%20to%20go%20on%20vacation%20in%20the%20tropics,%20and%20me,%20staying%20behind%20in%20steamy%20North%20Carolina,%20both%20felt%20the%20need%20for%20a%20dessert%20that%20carried%20us%20off%20to%20a%20beach%20with%20white%20sands,%20turquoise%20water,%20and%20cool%20breezes.%20%20%20We%20fooled%20around%20with%20the%20Bon%20Appetit%20recipe,%20replacing%20vanilla%20extract%20for%20coconut%20extract,%20lime%20zest%20in%20place%20of%20lemon%20zest,%20and%20adding%20shredded%20coconut%20into%20the%20mix.%20%20%20The%20coconut%20extract%20and%20lime%20zest%20made%20the%20batter%20smell%20like%20a%20heady%20mix%20of%20Hawaiian%20Tropic%20sunscreen%20and%20Pina%20Colada%20and%20before%20we%20knew%20it,%20we%20were%20dumping%20a%20tablespoon%20of%20Meyers%20Dark%20Rum%20into%20the%20batter.%20%20%20Swept%20up%20in%20the%20moment,%20I%20think%20we%20would%20have%20added%20a%20paper%20umbrella%20if%20we%20thought%20it%20would%20taste%20good.%3C/p%3E%3Cp%3EThis%20week,%20as%20colder%20temperatures%20continue%20to%20hang%20around,%20I%20found%20myself%20in%20need%20of%20something%20that%20at%20least%20tasted%20like%20warmer%20days.%20%20I%20pulled%20out%20our%20notes%20from%20this%20summer%20and%20whipped%20up%20a%20batch%20of%20this%20cake.%20%20Requiring%20just%2010%20minutes%20of%20prep,%20the%20smell%20of%20coconut%20and%20lime%20wafting%20out%20of%20my%20oven%20was%20reason%20enough%20to%20go%20to%20the%20trouble.%20%20A%20slice%20of%20the%20cake%20(or%20possibly%20two)%20blew%20all%20my%20winter%20blues%20away.%3C/p%3E%3Cp%3EInspired%20by%20the%20%E2%80%9CFrench%20Yogurt%20Cake%E2%80%9D%20recipe%20in%20the%20May%202012%20issue%20of%20Bon%20Appetit%3C/p%3E%3Cp%3EServes%208%3C/p%3E%3Cp%3EWhile%20the%20original%20recipe%20calls%20for%20whole-milk%20Greek%20yogurt,%20I%20have%20used%20non-fat%20Greek%20yogurt%20and%20gotten%20equally%20good%20results.%20%20I%20would%20use%20whatever%20you%20have%20on%20hand%20as%20a%20trip%20to%20the%20grocery%20store%20would%20cancel%20out%20this%20recipe%E2%80%99s%20simplicity.%20%20Feel%20free%20to%20get%20creative%20with%20the%20recipe%20below.%20%20The%20next%20time%20I%20make%20this%20cake%20I%20plan%20to%20use%20orange%20zest.%3C/p%3E%3Cp%3EPreheat%20the%20oven%20to%20350%20degrees.%20%20Grease%20a%20loaf%20(8%20%C2%BD%20x%204%20%C2%BC-inch)%20pan%20with%20cooking%20spray%20or%20a%20little%20vegetable%20oil%20and%20dust%20with%20flour.%20%20Set%20aside.%3C/p%3E%3Cp%3EIn%20a%20medium%20bowl,%20combine%20the%20flour,%20baking%20powder,%20and%20salt.%20%20Whisk%20to%20combine%20and%20then%20stir%20in%20the%20flaked%20coconut.%20%20Set%20the%20dry%20ingredients%20aside.%3C/p%3E%3Cp%3EIn%20a%20large%20bowl,%20combine%20the%20sugar%20and%20lime%20zest%20and%20whisk%20to%20combine.%20%20Stir%20in%20the%20whole-milk%20Greek%20yogurt,%20the%20vegetable%20oil,%20eggs,%20coconut%20extract%20and%20Meyers%20Dark%20Rum.%20%20Stir%20in%20the%20dry%20ingredients%20until%20just%20combined.%3C/p%3E%3Cp%3EPour%20batter%20into%20the%20prepared%20pan%20and%20smooth%20the%20top.%20%20Bake%20for%2045%20minutes%20or%20until%20the%20cake%20is%20golden%20brown%20and%20a%20skewer%20inserted%20in%20the%20center%20of%20the%20cake%20comes%20out%20clean.%20%20Let%20the%20cake%20cool%20on%20a%20wire%20rack%20for%2015%20minutes%20before%20turning%20the%20cake%20out%20on%20the%20rack.%20%20%20Let%20cool%20before%20serving.%20%20%20Store%20in%20an%20airtight%20container%20at%20room%20temperature.%3C/p%3E%3Cp%3ELike%20Loading...%3C/p%3E){kind=link}
