Ingredients
- 1 c. butter
- 2 c. powdered sugar -- sifted
- 4 sqr unsweetened chocolate melted
- 4 x Large eggs
- 1 tsp peppermint extract
- 2 tsp vanilla
- 18 x vanilla wafers
- 1 c. heavy cream -- whipped maraschino cherries
Directions
- Cream butter and sugar; blend in melted chocolate. Add in Large eggs and beat well after each egg. Add in flavorings. Using 18 cupcake/muffin liners, put a vanilla wafer in the bottom of each and then fill with chocolate mix 3/4 full. Place a dollop of whipped cream on each and top with a cherry.
- Freeze in muffin pans to retain shape. After the creams are frzn, they may be stored in plastic bags. Serve frzn.
