  • 4 x cod fillets - (4 to 6 ounce ea)
  • 4 sht Reynolds Wrap heavy-duty aluminum foil - (12" x 18" ea)
  • 1/4 c. grated Parmesan cheese Cayenne pepper to taste
  • 2 med zucchini sliced
  • 1/2 med red bell pepper cut in strips

Directions

  1. Preheat oven to 450 degrees, spray foil with nonstick cooking spray. Place one cod fillet on each sheet of foil. Sprinkle with Parmesan cheese and cayenne pepper. Top with vegetables.
  2. Bring up sides of foil and double fold. Double fold ends to create four packets, leaving room for heat circulation inside packets.
  3. Bake 18 to 22 min on a cookie sheet in oven.
  4. To Grill: Preheat grill to medium-high and grill 10 to 12 min in a covered grill.
  5. This recipe yields 4 servings.
