Filled Armenian Cookies Recipe

Ingredients

  • 5 1/2 c. Swansdown(r) or possibly Softasilk(r) flour
  • 3 x Large eggs beaten
  • 1 1/2 c. granulated sugar
  • 1/2 c. whole lowfat milk
  • 1/2 tsp baking soda
  • 1 1/2 c. unsalted butter

Directions

  1. Beat Large eggs well and add in to melted butter. Dissolve sugar into lowfat milk and add in to the Large eggs and butter. Mix flour and baking soda together and slowly add in to the above mix to create a soft dough. Roll out about 1/4 inch thick and cut into 2 1/2 inch diameter circles. Place a tsp. full of the filling onto the circle, fold over and seal the sides together so as to make an egg shape with the filling inside. Bake cookies in a 350 degree oven for 20-25 min.
  2. Filling:2 c. finely grnd walnuts2 egg whites [beaten]
  3. 1 Tbsp. sugarpinch of cinnamon
  4. Mix the above in the order presented.
