Ingredients
- 2 c. flour
- 2 teaspoon baking pwdr
- 1/2 c. sugar
- 1 1/2 teaspoon salt
- 3 c. lowfat milk
- 2 large eggs
- 2 T vegetable oil
- 5 T melted butter
- 1/4 c. confectioner's sugar
- 1 c. maple syrup
Directions
- In a mixing bowl, put together the flour, baking pwdr, sugar, lowfat milk and large eggs. Grease a griddle lightly and heat over medium high heat. Pour sufficient of the batter out to make a thin, 7 inch pancake. Cook till golden on the bottom and bubbly on top; flip over and cook another one or possibly two min. Remove to a heated platter and repeat with remaining batter. Brush pancakes with melted butter and sprinkle with confectioner's sugar. Serve with maple syrup.
