Directions

  1. Mix the flour, sugar, and salt. Grate the rind of half a lemon and add in it along with lemon juice (optional). Beat the egg yolks, lowfat milk, and butter together and add in it to the first mix. Beat the egg whites till stiff and fold them in. Pour into a buttered oven-proof dish. Place in a pan of warm water (so the water comes up the sides 1 1/2 inches). Bake at 325 degrees for about 50 min. It's done when you insert a knife around the edges and no liquid is left.
