Duck Cakes With Nopalito Cactus Sauce Recipe

Ingredients

  • 1 whl duck
  • 2 x Yellow onions, thinly sliced
  • 2 x Red onions, thinly sliced
  • 1 bn Leeks, thinly sliced
  • 1 bn Green onions, thinly sliced
  • 8 whl Large eggs Salt and pepper Clarified butter, for frying
  • 3 x Strips bacon
  • 3 Tbsp. Onion, minced
  • 2 c. Nopales, cleaned and diced
  • 1 tsp Garlic, minced
  • 3 Tbsp. Vinegar, (rice, herb, pepper and fruit)
  • 4 Tbsp. Sugar
  • 1 tsp Chili paste
  • 2 x Limes, Juice of

Directions

  1. Wash, season and cook duck at 350 degrees till completely done
  2. (approximately l 1/2 hrs) and falling off the bone. When duck is cold, separate skin from meat and grind the skin. Shred the meat very fine. Mix with the sliced onions, Large eggs, grnd duck skin and salt pepper. Shape into desired size patties and pan fry till crisp in clarified butter.
  3. Sauce:In sauce pan, cook bacon till crisp. Throw away excess fat. Add in 1/2 of the nopales, garlic and onions and cook for approximately 1 to 2 min. Set aside. In same pan, add in sugar and vinegar. Reduce till thick and slightly caramelized. Add in chili paste and the lime juice toss with reserved nopales.
  4. Serve as a side dish, with rice or possibly as a sauce.
